Ingredients
  

  • 1 lb slivered almonds
  • 5 ½ oz walnuts
  • 6 oz pumpkin seeds
  • 7 oz unsweetened coconut flakes
  • 3/4 - 1 cup almond flour
  • 3 tbsps ground cinnamon
  • 1 tbsp vanilla extract
  • 1/4 cup chia seeds
  • 1/4 cup flax seeds
  • 3/4 cup soy milk
  • 5 ½ oz pecans
  • 1 pinch salt

Instructions
 

  • Heat oven to 375 degrees
  • Lightly grease a baking sheet
  • In a large bowl, mix all the dry ingredients
  • Add the vanilla and soy milk and mix until everything is well combined
  • Pour mixture onto greased baking sheet and spread evenly
  • Bake at 375 degrees for 8 - 10 minutes, tossing after 5 minutes. Pay close attention as it burns easily.
  • Serve with blueberries, strawberries, and plant-based milk.

Notes

This recipe makes a large batch and the cereal can be used as a topping on other dishes.
