Black Bean Soup

This is an easy, delicious soup that warms the tummy and gives comfort particularly on a cold day. In just 15 minutes, you can have this tasty dish when you want something fast.

- 2 tbsp olive oil
- 2 cloves garlic
- 1 onion small
- 1/2 tsp chili powder
- 2 15 oz cans Eden organic black beans with their liquid
- 1 14.5 oz can Muir organic fire-roasted diced tomatoes with their liquid (either with or without green chiles)
- 1 cup Imagine organic vegetable broth
- 1/2 tsp kosher salt or to taste
In a saucepan, heat the olive oil and garlic over medium heat.
When the garlic bubbles around the edges, add the onion and sauté for about 3 minutes until the onion begins to soften.
Add the chili powder and sauté for another minute.
Add the black beans and their liquid, the tomatoes and their liquid, and the broth. Stir until combined.
Turn up the heat to medium-high, bringing the soup to a boil, then turn down to let simmer for a few minutes.
We suggest toppings of pickled red onions, lime wedge, tortilla chips, diced avocado.
